Do Ahead   -   (60 min - 5 min work)
  1. Cook PASTA in salted water as for any other use, except go a little longer than "al dente" as it will stiffen when cold. Drain and tumble with a little Olive Oil so it doesn't stick together. Let cool completely.
Make   -   (45 min)
  1. Quarter ONION lengthwise, then slice fairly thin crosswise.
  2. Cut CUCUMBER in half lengthwise, then slice about 1/8 inch crosswise.
  3. Crumble FETA.
  4. Tear BASIL medium. Chop PARSLEY and MINT small. Mix all. Measure is after chopping.
  5. Dry pan roast PINE NUTS until just golden.
  6. Crush GARLIC and chop fine. Squeeze LEMON JUICE. Mix all Dressing items in a small jar.
  7. Tumble together all Salad items in a mixing bowl. Shake up the dressing well and pour over. Tumble to coat.
  8. Serve cool or cold.
NOTES:
  1. Pasta:

      Choose a pasta complex enough to hold dressing well.
  2. Cucumber:

      Persian Cucumbers are preferred, as they are a small size and don't need to be peeled. If you have only the standard green blimps, peel, seed, and then weigh.
  3. Feta Cheese:

      [White Cheese (Bulgaria, Turkey, Denmark); Sheep Cheese (Bulgaria)]   Soft fresh Mozzarella can also be used.
  4. Herbs:

      The pattern recipe calls for Herbes de Provence or Italian Seasoning. Use whatever dried herbs you prefer (or have).
  5. Chili Flake

      For guests I usually use Aleppo Mild or Aleppo Extra Hot, both of which are fairly mild. Use your own best judgement.
  6. Making Ahead:

      Finish the salad except for the Fresh Herb mix. Tumble those in just before serving.
  7. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
